The water dilutes the red wine which makes it easier to blot up.
When red wine hits a white shirt tablecloth or light colored carpet try to blot up as much of the wine as possible and then spray hydrogen peroxide on the stain followed by a hefty sprinkle of baking soda.
Keep blotting fresh cleaning solution onto the carpet as long as you continue to get transfer of the red wine spilled from the carpet onto the cloth.
